Dal Fry

Ingredients :
Toor Dal 3 cups
Red or Green Chillies
Tomatoes 2
Onion 1
Cumin seeds 1 Teaspoon
Salt to taste
Turmeric powder to color
Garlic paste 1 tablespoon
Coriander leaves
curry leaves
Mustard seeds 1 teaspoon
Oil

Method of Preparation:

Pressure cook dal,Onion,tomatoes and chillies in a cooker.
Grind the mixture.
Add oil to a pan, and saute with mustard seeds until they pop.
Add cury leaves and cumin seeds and saute.
Add Turmeric powder and if needed chilli powder too.
Add the ground paste.
Add Garlic paste and salt.
Top it with chopped coriander leaves.

Dal fry ready!!

Methi Paratha

Methi Paratha

Ingredients:

Methi leaves 1 bunch
cumin seeds
salt to taste
coriander powder 1 tbspoon
chilli powder 3-4 tbspoon
Turmeric to color
onions 2
Wheat flour 7-8 cups
oil 2 tbspoon


Method of Preparation:

Add oil to the pan and fry the finely cut onions until they turn brown.Add cumin seeds and saute. Add washed and finely cut methi leaves to the pan and fry for a while. Add salt,turmeric powder,chilli and coriander powder. Add the mixture to the wheat flour and prepare the dough.Roll and fry the chapathis and serve hot.

Pudina (Mint) Pulav

Ingredients :

Pudina 1 bunch
Grated Coconut 1/2 cup
Green chillies 3-4
Green peas (Optional, recommended)
Mustard seeds 1 tbspn
Turmeric 1 small spoon
Cloves 2
Cinnamon 1 small piece
Ginger garlic paste 2 tbspn
Chopped onions 1 cup
chopped tomatoes 1/2 cup
Soaked Rice 4 cups
Chilli powder (if more spicy taste required)
coriander powder 1/2 tbspn
Salt to taste
Oil 3 tbspn

Method of Preparation:

Grind the pudina leaves,cloves,cinnamom,chillies and grated cocunut.
In a cooker, add the oil and season with mustard seeds and curry leaves.
Add onions and fry till they turn golden brown. Add Tomatoes and saute for a while.
Add peas if considered.
Add turmeric powder,chilli powder,coriander powder,salt and then the ground paste.
Add the ginger-garlic paste.
Add Rice and saute for a minute. Add water the required amount of water and pressure cook.

Pudina Rice is now ready.Serve with Raita.

Brinjal Chutney

Ingredients:
Brinjals 4-5
Tomato 1-2
Green chillies 3-4
Salt to taste
Turmeric Powder to color
Mustard seeds to season
Onions 1-2
Garlic 3-4 cloves
Coriander leaves few


Preparation Method:

Boil Brinjals,tomatoes and green chillies. Grind the boiled tomatoes and chillies with garlic and coriander . Take a pan and add a tablespoon of oil and saute with a few Mustard seeds. Add finely chopped onions and saute till they turn golden brown. Add the ground paste with salt and turmeric. Finally add the boiled brinjals that are mashed to the pan and a very little amount of water (say, 4-5 tablespoons)and let it cook for a while.
Brinjal Chutney is now ready to be used with Chapathi or rice.
I have heard it tastes good. Not tasted because brinjals are my worst enemies in life!! However,people have liked it, hences tested and proven!!

Aloo Mutter

Ingredients required:
Aloo and Mutter (hold on... I know this is obvious, the rest will follow too!! :P)
Cumin Seeds 1 tbspoon
Onions 1
Tomatoes 4-5
Mustard seeds 1 tbspoon
Oil 1 tbspoon
Salt To taste
Ginger-garlic paste 1-2 tbspoon
Turmeric powder To color
Coriandar powder 2 tbspoon
Chilli powder 3 tbspoon
Coriander leaves As much as you want

P.S: Ingredients quantity for a 5-6 servings.
Preparation Method:

Pressure cook the peas and peeled and chopped potatoes.
Grind chopped onions and tomatoes to make a paste.
Add 1 tbspoon of oil in a pan,add mustard seeds and cumin seeds for seasoning.
Add the ground paste,ginger-garlic paste,chilli powder,turmeric powder,salt,coriander powder and saute till the texture becomes relatively thick.
Add the baked potatoes and peas.
Garnish with coriander leaves.
Pray to God!!!!!!!!!!!!!!!!!!!!!!!!!!
